Nutburgers with Rosemary, Thyme and Oregano

Serves 4 - Recipe provided by Harmony Herbs (Portia and Ute)

1 large onion
3 sticks of celery - diced
80gms butter
1 teaspoon rosemary and oregano - minced
1 teaspoon thyme leaves
1/4 cup wholemeal flour
2 teaspoons vegetable stock in 1 1/4 cup hot water
250gms mixed nuts - finely chopped or grated
4 1/2 cups fine wholemeal breadcrumbs
2 teaspoons yeast extract (or vegemite)
soy sauce, salt and pepper to taste

Saute celery and onions in butter over medium heat for 1 mintue. Add herbs and flour. Stir and cook for 2 mintues. Stir in the stock mixture, nuts, all but 1/4 cup bread crumbs and yeast extract. Season with soy sauce, salt and peper. Cool mixture -for 8 patties or 12 smaller ones. Sprinkle liberally with the reserved breadcrumbs. Gently fry the burgers in a little oil. Serve with a cold glass of Pfeiffer Ensemble Rosé.
