Omelette Foo Yung

Serves 4 – Recipe sourced from The Cook's Kitchen Bible – Norma MacMillan

 

Ingredients
1 tablespoon groundnut or vegetable oil
2-3 spring onions chopped
1 celery stalk, diced
2 teaspoons finely chopped fresh ginger
30g cooked ham, diced
1 ½ tablespoons chopped fresh coriander
1-2 tablespoons soy sauce
8-12 eggs (with 8-12 teaspoons added water – 1 teaspoon per egg)
salt and pepper
55-85g butter


Method
Heat the oil in a frying pan over moderate heat. Add the spring onions, celery, ginger and garlic and cook for 1 minute, stirring frequently.


Add the ham. Sprinkle with coriander and soy sauce. Reduce the heat to low and leave the mixture to heat through, stirring occasionally.


Meanwhile, make 4 omelettes. Before folding each omelette, spoon one quarter of the filling over the centre. Serve hot with more soy sauce for sprinkling and a chilled glass of Pfeiffer Seriously Fine.
