Fruit Sourcing North East Victoria - Rutherglen | King Valley

Harvest Date February and March 2016

Vintage The 2016 growing season looked very promising, with good Winter and Spring rainfall until October.  November and December were dry and warm, leading to a relatively mild January.  Supplementary irrigation was required to maintain good soil moisture levels and canopy health.

The first week of February saw two inches of rain fall, which was just before the onset of harvest, so certainly created a few nerves at the beginning of vintage.

Fortunately the rest of the harvest remained dry, and all grape varieties came in very early, with picking starting on the 10th February.  Vintage progressed at a fast and furious pace, due to three very warm weeks of temperatures between 35-40C, with incredibly rapid ripening across all varieties.  Early blocks of Cabernet, Durif and Muscat were all harvested in February!  

March saw the warm and dry conditions continue, along with the fast pace of the vintage.   All varieties were harvested by the end of the month, with the exception of Muscadelle for Topaque, which was picked in April.

Overall cropping levels were average and the quality of the vintage is good, with ripe and full flavours, with Muscadelle for Topaque the highlight. 

Winemakers Comments The 2016 Pfeiffer Cabernet Sauvignon is a blend of four parcels of wine.  Each parcel was handled separately.  Two parcels were run off by 10% at crushing, then were cold soaked for 3 days, with gentle pumping over.  Fermentation of these two parcels occurred in static fermenters, with hand pump overs and rack and returns carried out twice daily.  The third parcel was crushed into an open fermenter, where it was cold soaked for approximately 48 hours.  It was hand plunged and pumped over three times daily throughout the fermentation.  The final parcel was fermented in an open vat with hand plunging 3 times daily, before being pressed into new French oak hogsheads and puncheons for the completion of fermentation. 

Each parcel was matured separately in French oak of various sizes and ages.  The barrel fermented parcel had extended lees contact for 15 months to improve textural properties.  After oak maturation, the wine was blended, fined and clarified prior to bottling in late August 2017.

Our 2016 Pfeiffer Cabernet Sauvignon is a vibrant, dark purple-red colour.  The bouquet exhibits aromas of black berries, dried herbs and mint.  The palate is richly flavoured, with ripe fore to mid-palate fruit persisting to a fine, long tannin finish.

Yeast FX 10 - A Bordeaux strain which enhances colour and fruit character of the wine.
